It is, on the surface, just as the name implies, a push toward the use of produce, meats, cheeses, seafood, and other ingredients sourced from purveyors in all six geographic regions of North and South Carolina. This new style of cooking and sourcing that’s catching on like wildfire in the region is defined by two main components. The first is the development of personal relationships with the fishermen, cattle ranchers, and farmers who grow and harvest the ingredients that go into our Menu items. Because Chef DiMaio and his team reach out to local and regional farmers, he knows what produce is in season at any given time of the year and how regional weather will affect certain crops. This allows him to plan the freshest menu items, using ingredients found anywhere from the South Carolina coast to the mountains of North Carolina. The second component of Carolina Cuisine is the use of a live fire grill, spit roasting, flame baking and the flat-top plancha griddling techniques to prepare fresh meat, fish and vegetables.

By reaching around the region for ingredients, we hope to bring the idea of farm-to-table dining sharply into focus and support a cycle of sustainability for the Carolinas we love. Chef Joe DiMaio has been preparing for his position as the new head chef at Stars for his whole life. From the age of 5, DiMaio loved being in the kitchen exploring and growing his appreciation for food, and since then his appetite for learning new food and cooking styles has never dwindled. After graduating from the Art Institute of Charleston, his love of cooking led him to attain a line chef position at the Ocean Room at The Sanctuary on Kiawah Island. While there, he worked with and learned from renowned chefs like Charlie Trotter, Patrick O’Connell, Sean Brock, Mike Lata, Craig Deihl, Ken Vedrinski and Norman Van Aiken. He then held a position as Sous Chef at Mercato before joining us at Stars Rooftop & Grill Room.

Joe is known for innovation in the kitchen, and he can always be found studying menus, reading books, and working directly with local suppliers to develop new ideas. He’s an expert on the different growing seasons of the Carolinas, knowing which produce is in season at what time and how best to cut and use fresh meat and fish, allowing Stars to offer the best prepared, locally sourced menu selections around. In addition to his vast knowledge about fresh meat and produce, he’s also an expert in pastry making! He’s considered one of the best young chefs in the country and is known for helping to start the “Carolina Cuisine” movement that is currently sweeping the Southeast.

Chef Joe has received several culinary competition awards, including a silver medal in ACF’s Charleston competition and a silver medal in the ACF USA Culinary Cup, but at Stars we’ve always known Joe Dimaio possesses rare culinary talent. He’s been a part of Stars since before we opened in 2012, and he’s been a big part of making Stars the fine dining destination it has become. We’re proud to name him our new Head Chef, and we cannot wait to see where he takes us in 2014!

It’s time once again for the Charleston Wine and Food Festival, a cultural extravaganza bringing together local businesses, wine experts, culinary heavyweights and foodies alike. It provides a rare chance to sample cuisine prepared using local and artisan produce, by some of the country’s best chefs, and to taste an array of vintages from the best winemakers in the world. Proceeds from ticket sales go to benefit scholarship programs for the culinary and hospitality workplace. With one of the most history and culture-rich cities in the country as the backdrop, it’s no wonder the Charleston Wine and Food festival is popular with visitors as well as locals. Last year the festival topped 23,000 attendees, and numbers are expected to grow even more this year.


At Stars Rooftop & Grill Room we could not be happier to be a part of an event that so thoroughly represents the rich culinary culture to be found in and around the Holy City. On Friday, March 7th at 12pm, we’ll be hosting our Early Spring Harvest Luncheon, showcasing a variety of wines paired with the freshest local and regional ingredients and prepared by Chef Nathan Thurston using our signature “Grates of Hell” wood fire grill.

Fresh veggies and fruits come to Stars from Ambrose Farms, based on Wadmalaw Island, SC, and grass fed beef and lamb have been sourced from Palmetto Beef, based in Gaffney, SC, and Border Springs Farm, based in Patrick Springs, VA. The freezing temperatures that settled in the Lowcountry over the last few months, made harvesting times for fruits and vegetables unpredictable, but Chef Nathan Thurston isn’t complaining! He loves the challenge of working with local farms each year to plan a menu that showcases the best and most ripe ingredients the Lowcountry has to offer, and this year is no exception.

Wines for the luncheon will be provided by Round Pond Estates, based in the heart of Napa Valley. The winery is owned and run by the MacDonnell family who’ve been making pure, organic and artisan wines from the freshest ingredients for two generations. Their philosophy:

Stars’ Rooftop Bar is an ideal space for hosts seeking to wow their guests with beautiful 360 degree views of the 18th century architecture and steeples that dot the horizon of the Holy City, as well as the sky full of twinkling constellations that give Stars its name. Your guests can gather around one of the two full bars, or relax on cushioned seating near the natural sea grass and herb planters that line the edge of the rooftop. Charleston’s mild temperatures make the open space a favorite during most seasons, and space heaters are available to ensure that your guests are comfortable, should the air become cool.
