CHEF JOE DIMAIO AND HIS “ALL STAR TEAM”
CHEF JOE has had a meteoric climb to his position at “Stars”. He is now considered one of the best young Chefs in the country and has been instrumental in starting the new “Carolina Cuisine” movement sweeping the Southeastern region of the country. Joe’s Italian background had him in the kitchen and interested in food from the age of five. He is a voracious student, constantly studying menus, books, new food and cooking styles, as well as working directly with the local suppliers to develop new products and ideas. He has come to specialize in the knowledge of the growing seasons in the Carolinas and when items are at their peak freshness. He is also very proficient in baking and pastry as well as a specialist in cutting and using local fish and meats. He has had a big part in making Stars the food destination it is; having been here since before the opening.
CHEF JOE graduated from the Art Institute of Charleston and went on to hold a line chef position at the Ocean Room at The Sanctuary. There, through Gourmet and Grapes Charity Events he had the honor of working with some of the great chefs in the region and country such as Charlie Trotter, Patrick O’Connell, Sean Brock, Mike Lata, Craig Deihl, Ken Vedrinski and Norman Van Aiken. He later went to Mercato in Charleston as a sous chef before coming to Stars.
Chef Joe has received several culinary competition awards including a silver medal in ACF’s Charleston competition and a silver medal in the ACF USA Culinary Cup, among others. We expect Joe to be nominated for a number of other awards in 2014 and believe he is truly a rising “Star”.
