For Stars’ newest chef, Joe DiMaio, the key ingredient to creating the perfect meal is fire. Whether he’s searing fresh fish, smoking juicy pork chops, or slow-roasting a prime rib on the rotisserie, his true talents surface in the heat of our Grill Room. Chef DiMaio is known for helping pioneer the Carolina Cuisine movement that is quickly spreading among kitchens throughout the southeast. The popular culinary movement focuses on two main components. The first involves developing trusted relationships with regional farmers and producers in order to learn the various growing seasons for areas throughout North and South Carolina. By doing this, Chef DiMaio knows which ingredients are the freshest at which times of the year, and he’s able to plan our menu accordingly, utilizing fruits and vegetables at the peak of ripeness while still buying local and supporting regional farmers and producers.
The second key component to the Carolina Cuisine movement is the use of several distinct grilling techniques, and this is where Chef DiMaio’s talent with a flame comes in. The Grill Room at Stars houses three state of the art grills: a custom-designed live fire grill, plancha and a six-spit rotisserie. The rotisserie method of grilling is a special favorite of DiMaio’s because it exposes the protein to slow, even heat, resulting in juicy, flavorful, perfectly cooked meat whether you’re preparing chicken, pork or fish. Cooking this way brings out the meat’s natural flavors and the flavor of the fresh herbs and spices Chef DiMaio uses from our rooftop planters. Every day at Stars we offer a new Rotisserie, Ocean Harvest and Vegetable Plate special created using the freshest meat and seafood from local and regional farmers. Monday’s are the perfect time to come and taste for yourself what everyone has been raving about since we’ve opened! Our full dining menu will also be available on Mondays.
