Stars Split-Roasted Fresh Organic Chicken

Our Grill Room is home to three state-of-the-art grills, all custom built for us by Texas based J&R Grill Company. Take a look into our exhibition style kitchen and you’ll find a live fire wood burning grill, a plancha or “plank” style grill, and a six-spit rotisserie. The grill room is also home to the Lowcountry’s live fire and rotisserie expert, champion of the Carolina Cuisine movement, Chef Joe DiMaio. Each day Chef DiMaio prepares roasted chicken on the rotisserie for that night’s dinner menu. Each chicken is brined overnight to intensify and integrate more flavor, and then cooked whole on the rotisserie while being periodically sprayed with brine. Order the Spit-Roasted Organic Chicken when you visit us for dinner, and you’ll receive a seasonal set of one leg, one wing, one thigh, and a portion of the breast, all perfectly tender and infused with rich natural flavor.

Chef DiMaio’s expertise doesn’t only lend itself to the rotisserie. Visitors looking to satisfy their seafood craving should look no further than our Plancha Seared Jumbo Lump Crab Cake. Four ounces of fresh, handpicked lump crab meat is prepared with herbs and mustard, and then placed on our plancha grill, giving it a delicately crispy outer crust and sealing in its rich flavor. The finished crab cake is served atop a mix of thinly shaved zucchini, squash, and carrots, and finished with pea tendrils and a pink peppercorn and citrus vinaigrette.

With 360-degree views of Charleston’s skyline, our Rooftop Bar is as gorgeous during the day as it is in the evening. Guests can relax around the bar or enjoy table seating while taking in the sunset and starlit nights. The full Rooftop Bar can be reserved for large events and gatherings. For more intimate events we have a private area overlooking King Street that can be reserved separately from the main Rooftop Bar for cocktail receptions or a cocktail hour prior to dinner in the Wilkinson Room.
